Easy Taco Soup

It’s FINALLY starting to feel like fall in Nebraska! Personally, I’m ready for fall as soon as Starbucks drops the PSL on 9/1, but it has consistently been in the 70s and warm until, like, just last week. There was even SNOW today! 😐 Now that the temps are dropping we can officially put the pot on the stove and keep it there until, like, April. SOUP SEASON IS HERE!

I like soup even in the spring and summer months, but nothing compares to a bowl of this Taco Soup on a chilly fall day. It warms you up from the insides and makes you feel all warm and fuzzy, total comfort food to me.

This particular recipe is also extra special because it has been a Christmas Eve tradition in our home for about the last 10 years or so. My mom’s family tradition growing up has always been Oyster Stew on Christmas Eve. However,  I don’t like that soup, and neither do about half of us around the table so we always make a second soup option. THIS taco soup has been that second option for quite some time. It’s SUPER simple to make, and like chili, it gets better the longer it sits. But unlike Chili it doesn’t NEED to sit as long.

When I say this soup is simple, I mean it. Even better it can come together from beginning to end in just 30 minutes!

The Process

The process…if you can even call it a process… 🙂

Brown the beef with Salt, Pepper, Garlic Powder, and Dried Minced Onion; to taste. Every time I brown ground beef this is always the seasonings I use. It ends up being about 1tsp Salt, ½ tsp Pepper and Garlic powder, and 1 tsp of the minces onion. You can omit the garlic powder and onion, but why mess with magic.

Tip: Let’s limit the pans used and brown the beef right in the stock pot you are using for the soup.

Drain and return to the pot.

In the pot, add canned diced tomatoes, corn, beans and taco seasoning.  Stir, or don’t…then add the Tomato Juice.

Pour in the Tomato Juice and bring to a boil.

Simmer on low for at least 20-25 minutes. The longer it sits the better. 🙂

Top that deliciousness with a dollop of sour cream, shredded cheese, and Fritos. I prefer to serve the Fritos on the side, so they keep crunchy with every bite!

Recipe

Easy Taco Soup

Total Time 30 minutes
Servings 8 Large Servings

Ingredients

  • 1 1/2 lbs Ground Beef
  • 1 pk Taco Seasoning
  • 1 can Pinto Beans
  • 1 can Petite Diced Tomatoes
  • 1 cup Frozen Corn
  • 48 oz Tomato Juice
  • Salt/Pepper/Garlic Powder to taste

Toppings

  • Sour Cream
  • Shredded Cheese
  • Fritos

Instructions

  1. Brown beef with salt, pepper, garlic powder, and optional dried minced garlic. Drain.

  2. In a stock pot combine all ingredients and stir. Heat to boiling.

  3. Turn heat down to a simmer for 25 minutes. The longer it simmers the better.

  4. Top with sour cream, cheese, and Fritos.
