Cheesy Baked Onion Dip

I know I am not the only one who spends this time of year eating my weight in snack foods. Occasionally, on the weekends at our house, we even skip a traditional “dinner” and just make a bunch of appetizers at home to enjoy as a meal. Really, it’s just an excuse to begin happy hour early. (Literally, this is what we did last night-so much fun!)

My favorite snack foods are dips, any dips really, but if they include cream cheese, onion, and garlic- watch out, because I may just run you over to get to it first. Today’s dip recipe is so good, it may be the first recipe that I made, ate, sent to multiple people (my mom and mother-in-law can attest), and then blogged about all in an hour’s time. Oh, and it’s also gone already. Birdbelly husband and I devoured it immediately.

Not only is my Cheesy Baked Onion Dip delicious, it also came together with only ingredients I had in the kitchen. Making it the perfect last minute, impress all your friends, I’m always so prepared, appetizer “go-to.” Perfect for your NYE party. Whatever you are doing on NYE this year, whether its spending it with friends or staying in, I promise this dip is a perfect addition to your up-all-night evening.

So let’s get to it, Cheesy Baked Onion Dip!

The Process:

Preheat your oven to 350.

In a bowl, mix together cream cheese, onion, and seasonings.

Next, stir in one cup of shredded cheddar cheese.

Transfer to an oven safe baking dish. I used a small 9×5 inch Le Creuset stoneware dish I received as a Christmas present. 🙂

If you are preparing this ahead of time, now would be when you would cover the dish in plastic wrap and pop it in the fridge.

 

Sprinkle remaining cheddar cheese on top. Place in the oven for 20 min, until the dip is hot all the way through and bubbling. You can broil for the last 1-2 minutes of you want a golden brown top.

Serve hot with your favorite crackers!

If you want a simpler way to keep the dip warm, forget the oven and place all ingredients in a small slow cooker. Keep on low, stirring occasionally.

Recipe:

Cheesy Baked Onion Dip

Servings 2 Cups

Ingredients

  • 8 oz Cream Cheese Softened
  • 1/4 c Diced Onion
  • 1 1/2 c Shredded Cheddar Cheese
  • 1 tbsp Dried Parsley
  • 1 tsp Garlic Powder or Freshly Minced Garlic
  • 1/2 tsp Onion Powder
  • 1/2 tsp Salt
  • 1/2 tsp Pepper

Instructions

  1. Preheat oven to 350

  2. In a bowl, mix together cream cheese, onion, and seasonings.

  3. Next, fold in 1 cup of the cheddar to the seasoned cream cheese.

  4. Transfer mixture to an oven safe dish, sprinkle with remaining shredded cheese. Bake for 20 minutes. 

    (Optional: Place all ingredients in a small slow cooker and cook on low stirring occasionally.)

  5. Serve warm with your favorite crackers!
