One of my favorite things about working from home this year has been the ability to make myself a fresh lunch. No lunch box of leftovers barely warmed in a communal microwave or a lunch prepared 4 to 12 hours prior. This wrap is one thing I have been making a lot lately, and it always hits the spot.
Chicken Caesar Wrap
My favorite salad, handheld.
Ingredients
- 1 Chicken Breast-Cooked See instructions
- Romaine Lettuce
- Caesar Dressing I use Marzetti Supreme Caesar
- Caesar Croutons
- Shredded Parmesan
- Cracked Black Pepper
- Wrap or Burrito Sized Tortilla
Instructions
-
Season Chicken Breast with salt, pepper, and garlic powder on both sides. I prefer to cook in my air fryer at 360 degrees for 18 min, flipping half way through. However, baking in the oven or in a skillet works great as well. I cook a couple at a time then eat throughout the week.
-
In a bowl, assemble your salad. If you are making for one, treat as if you are making enough for a side salad. Toss Romaine, dressing, pepper, cheese, and croutons together in a bowl. Set aside.
-
Warm your wrap/tortilla for 20 seconds in the microwave. This will make it plyable so it doesn't rip as you roll it up.
-
Place your salad down the center of the wrap/tortilla then place the chicken on top. Fold in the sides and roll. Just like your favorite burrito joint does. If you prepared too much salad for your wrap, congrats now you have a little salad on the side too.
-
Seam side down, I like to give the wrap a little squeeze and press it down. Then slice down the middle with a knife.
Recipe Notes
- I use approx. half a chicken breast, cubed, for one wrap.
