Classic Mac and Cheese

Ingredients

  • 2 cups Elbow Noodles Any short pasta will work.
  • 2 cups Mild Cheddar
  • 1 cup Sharp Cheddar
  • 2 1/4 cups Milk
  • 1/4 cup Flour
  • 1/4 cup Butter Real butter!
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1/4 tsp Garlic Powder
  • Extra cheese for topping About 1/2 cup

Instructions

  1. Preheat oven to 350.

  2. Cook noodles according to Al Dente box directions in salted water.

  3. Melt butter on medium heat.

  4. Add flour to melted butter, stir until incorporated.

  5. Add 2 cups of the milk, salt, pepper, and garlic powder. Whisk constantly until thickened. Roux will be thick enough once it is bubbling over the surface and coats the back of a spoon.

  6. Add in 3 cups of cheese, whisk until melted. Then add remaining 1/4 cup of milk. Stir.

  7. Add 1 tablespoon of butter to cooked noodles, stir until melted.

  8. Add your cheese sauce mixture to the noodles and gently stir until all of the noodles are coated in sauce.

  9. Transfer mixture to a greased 2 quart casserole dish.

  10. Place in the oven for 25 minutes.

  11. Remove the Mac and cheese and sprinkle remaining cheese on top, place back in the over under the broiler until the cheese is melted and golden brown.
