Simple chicken salad, whipped up in minutes using rotisserie chicken!
Skin, and debone cooled rotisserie chicken
Finely dice, celery and onion, set aside.
Cube chicken and transfer to larger bowl
Salt and pepper the chicken, sprinkle from up high to evenly distribute. Stir.
Stir in the mayo, 1/3 cup at a time. This way you will know if you need the full 2/3 cup.
Fold in Celery and Onion
Cover, Refrigerate for 30-60 minutes for flavors to combine.
Serve sandwich style with lettuce and tomato, or in a wrap, over a salad, or with crackers- possibilities are endless!
