So I am sure we are all currently doing the same thing right now. Still coming out of our Thanksgiving food coma. I don’t know about you… but I have been over eating for the past five days straight. I know I have talked about it before, but after holidays or coming home from vacation, I like to “detox” and eat light like salads or some simple chicken breast, but not this time. Nope.
I am skipping “meals” and focusing on snacks. Seems light, in my head anyway. But then I also convince myself that I am prepping my stomach for all of the Holiday parties in December. We have at least one a week.
Speaking of those holiday parties…What are you bringing? Perhaps an allergen friendly, delicious, crowd pleaser that takes very little effort? Oh, did I read your mind? 🙂 Then you must try this super cheesy, super simple, Spinach and Artichoke dip. And if you ask me, the store bought premade stuff is NOTHING compared to this.
So here it is, Warm Cheesy Spinach Artichoke Dip!
The Process:
First drain the jar of artichokes and then rough chop them. You don’t need to chop them too small as they will fall apart a little bit as you stir the dip.
Next, place all ingredients in your slow cooker except for the spinach.
Cook until cream cheese is softened and the mixture stirs easily. Approx. 1 hour on high or 2 hours on low, stirring occasionally.
Then add your Spinach*. Stir to incorporate. Cook at least 30 min longer until spinach wilts.
*If using frozen spinach, thaw and squeeze with paper towel to drain before adding it to slow cooker. Also, it’s best to let it cook a least 45 min. As it is generally colder when you put in the slow cooker and will take longer to warm up.
Keep on warm and stir occasionally while being served.

*If you’re ever in a hurry, like I know we all are, put the slow cooker bowl in the oven to speed up the melting process. Then back in the slow cooker vessel to keep warm and serve.

Warm Cheesy Spinach Artichoke Dip
Ingredients
- 8 oz Cream Cheese
- 14 oz Artichoke Hearts jarred
- 1/2 c Diced Onion
- 2 c Shredded Mozzarella
- 1/2 c Sour Cream
- 1/4 c Parmesan
- 3 cloves Garlic (about 1 tbsp)
- Salt/Pepper to taste
- 5 oz Fresh Spinach (9 or 10 oz, if frozen)
Instructions

Add all ingredients to slow cooker, except spinach. Cook on high for one hour or low for 2 hours. Stirring occasionally.

Add spinach and cook on high 30-45 min longer. Until Mixture stirs easily, spinach is wilted, and warm throughout.

Keep on warm while serving. Serve with chips or hunks of bread.
