Game Day Queso

I think I have said it before, but I really haven’t met a bowl of hot cheese that I didn’t like. Obviously, I like some more than others, and then there are the ones that I crave and make over and over and over again.

Now that football is starting back up, [Goooooooooo Biiiiiiiiggggg Reeeeeddddddd!!!!! The Frost is coming!], it’s time for my favorite Game Day Queso. I’m probably biased, but this is the best “Game Day” queso, and honestly it’s so freaking easy. I like to keep it simple when it comes to my favorite food group [hot cheese], and this recipe is no different. The secret? If you can call it a secret, is that I use taco meat instead of plain ground beef or sausage.

I can’t count how many times in my life I have made this party time appetizer, and that’s really what it is, a party app! Game Day? Yes. Game Night with Friends? Yup.  Oscar/SAG/Grammy viewing party? Oh hell yes! Saturday? Sure! Eat it whenever!

It also keeps really well. So even when there will just be a small group of people or I want it just for myself, you know I have done this too, it reheats and tastes just as good day two or three. So if you have leftovers put it in the fridge and reheat later!

Ok so let’s get to it; Game Day Queso!

The Process:

First brown your ground beef in a skillet with salt and pepper, drain. Put beef back into the skillet and cook according to the taco seasoning package directions. Once done, set aside.

Cube up VELVEETA cheese, and add to a slow cooker (4qt), with two cans Rotel and the taco meat. I always use Original Rotel, but you can use mild, hot, or any combination. The heat level of the taco seasoning and the rotel will definitely change the heat in the overall dip.

This is not an ad, but I can’t stress how important it is to use Velveeta brand cheese and not off-brand. I’m sorry, but the store brands just aren’t the same, not even a little bit, so don’t do it.

Cook on High for 1-2 hours, or Low for 2-4 hours until melted, stirring occasionally. Once the Velveeta is melted and everything has come together perfectly, keep on warm throughout your snacking process.

Serve with your favorite tortilla chips!

Ingredients

  • 32 oz Velveeta 1 Brick
  • 1 lb Ground Beef
  • 1 pk Taco Seasoning I used McCormick
  • 2 cans Original Rotel Can use Mild/Hot
  • Salt/Pepper to taste

Instructions

  1. Brown the ground beef with salt and pepper. Drain

  2. Put beef back in skillet, add taco seasoning and water and cook according to package directions. Set aside.

  3. Cube Velvet and add to your slow cooker (4 qt.) along with Rotel and taco meat.

  4. Cook on High for 1-2 hours or Low for 2-4 hours. Stirring occasionally.

  5. Serve with your favorite tortilla chips!

Recently when I made this dish Birdbelly husband and I transformed the leftovers by adding beans and served over top hot dogs!
