You know what I love more than weekends in the fall? Game Day’s in the fall! This week is week TWO for College Football, Huskers! Huskers! Huskers! And Kick-off week (get it :)), for the NFL!

As you probably guessed…or maybe read…we are Nebraska Cornhusker fans in our house, my alma mater, and when your state doesn’t have a pro team, your life kind of revolves around College sports. Game day is big in Lincoln. When Memorial Stadium is full, which is every home game, 355 Sellouts and counting….it becomes the third largest ‘city’ in the state! There is no better feeling than being in the crowd at Memorial Stadium, it’s a tight squeeze, you become besties with who you sit around, and feed off each other’s and the games energy (good, or bad). For me, it’s a feeling of home.

However, while I would like to spend every home game down in Lincoln with “my people” it is a long and exhausting day. So what is my second most favorite thing ever? GAME. DAY. SNACKS. AT. HOME.

I have always been described as a homebody. I will always pick home, on my couch, in my pajamas, with a good snack over all else…Did anyone get major CLUE game feels from that sentence? Now I want to order it from Amazon and play. But I digress…THEREFORE! I prefer to make a bunch of game day snacks and watch the game on the comfort of a couch, in front of a big HD TV, with the best food right in front of me…ya know, and a clean bathroom around the corner.

So, what are my go-to snacks for game-day? Well really anything I can think of, and I tend to always overdo it, but I love DIPS! All dips. I love anything I can put on a chip and eat, and if it has cream cheese in it, lord help me I just cannot stop. Aside from dips WINGS are definitely a go-to. I am not an “as hot as I can take it” wing eater. I like mild to minimal heat and a perfectly fried traditional wing, the ‘flats’ specifically. So how do you merge Wings and Dip into the perfect marriage? Buffalo Chicken Dip!

So grab your friends, your family, your neighbors, put on your game day war paint and a bowl of this delectable Buffalo Chicken Dip.

And now, I apparently just became southern…but actually that comes out of me quite a bit. My grandma is from the south. She moved to my hometown of Hastings as a teenager and still throws out some of the best, most random, sayings on the planet and I guess I just kind of sub-conscientiously use them too. My husband tells me I’m just like her; which is a total compliment, but I think sometimes it catches him off guard!

Ok, ok back to the recipe. As I said, we are making this easy…

Start by cooking 2 chicken breasts, about 1 pound. I do this by boiling them until cooked through and they shred very easily.

Bring salted water to a boil, place in chicken, and cook until 165. This takes about 10-15 mins. I can cut the breasts in half to cook them a little quicker. You don’t want to cut the pieces too small, because then you don’t get that shredded texture and taste that we are going for.

If you are looking to cut some corners and time, canned chicken can be used, but isn’t recommended for optimum flavor.

 

Next take the chicken out of the water and pat dry. Shred with fork.

Next in a crock pot add Chicken, Cream Cheese, Ranch, and wing sauce. You can cook this on high or low, just know if you cook on high you will need to stir more frequently.

Stir occasionally until the cream cheese is melted. Then add in salt and pepper to taste. Stir.

Last add in Shredded cheese, and stir until melted.

Keep crock pot on low or warm. Serve with…Whatever you want: Toasted bread, butter crackers (such as Ritz), tortilla chips, celery, and carrots.

Buffalo Chicken Dip

The perfect game day dip.

Ingredients

  • 1 lb Chicken Breast
  • 1 cup Frank's Wing Sauce
  • 1 cup Ranch Dressing
  • 8 oz Cream Cheese
  • 2 cups Sharp Cheddar Cheese Shredded
  • Salt and Pepper to taste

Instructions

  1. Bring a pot of salted water to a boil. Cook chicken until 165- approx. 10-15 min.

  2. Shred chicken with a fork.

  3. In a crock pot add chicken, ranch, wing sauce, and cream cheese. Cook on high or low, stirring occasionally, until melted.

  4. Add salt and pepper to taste, stir. 

  5. Last add shredded cheese and stir until melted. Keep on warm or low.

  6. Serve with…Whatever you want! Toasted bread, butter crackers (such as Ritz), tortilla chips, celery, and carrots.
